CARAMELIZED ONION PIE
2 Tbsp extra virgin olive oil
2 1/2 cups thinly sliced yellow onions
3/4 cup heavy cream
3/4 cup milk
3 large eggs
salt & pepper to taste
1 1/4 cups grated provolone cheese, divided
one pre-baked 9" pie crust
Preheat oven to 350ºF.
Heat olive oil in a sauté pan over medium heat, add onions and sauté, stirring
frequently, until golden and caramelized (about 30 minutes). Remove
onions from heat.
Whisk together cream, milk, eggs, salt & pepper in a medium bowl.
Add onions and 1 cup of cheese and stir to combine. Pour the mixture
evenly into the pie crust. Sprinkle remaining cheese on top of the pie.
Bake in a preheated oven until a knife inserted in the centre comes out
clean, about 40-45 min. If the pie crust starts to get too brown, cover
with foil.
Remove the pie from the oven and cool on a rack at least 10 minutes
before serving.
Pie may be served hot, cold or at room temperature. Nice with a
crispy green salad for lunch.
