HONEY-CARROT-DATE MUFFINS
Best when served warm or reheated in the microwave. Try them with cream cheese!

1/4 cup        butter or margerine
1/2 cup        honey
1/2 cup        milk
2                  eggs
1 1/2 cup    all purpose flour
1 1/2 tsp     baking powder
1 tsp           salt
1 cup          grated carrots
1 cup          pitted, chopped dates

Melt butter and honey. Stir in eggs and milk and beat.

Combine dry ingredients and stir thoroughly.

Stir in liquid mixtue\re and fold in carrots and dates

Bake at 375°F fir 15 to 20 minutes.
