CARROT WHEAT MUFFINS

1 c. all purpose flour
1/2 c. whole wheat flour
2 tsp baking powder
1/2 tsp salt
1/4 c. brown sugar
1/2 tsp cinnamon
1/8 tsp allspice
1 c. carrots, coarsely grated
1 tsp orange rind
1 egg
1 c. milk
1/4 tsp molasses
1/4 c. melted butter
1/2 c. raisins
1/4 c. chopped nuts

Measure all dry ingredients into large bowl.

Stir in carrots and orange rind

In small bowl, beat egg with milk,  molasses and melted butter.

Add to dry ingredients all at once, stirring just to moisten. Fold in nuts and raisins.

 Fill greased muffin tins 3/4 full. Bake at 375ºF. for 20 minutes.
