LASAGNA

               Ingredients:
               9 lasagna noodles
               1lb ground beef
               1 chopped onion
               1 clove of garlic, crushed
               1/2 teaspoon salt
               1/2  teaspoon. pepper
               1 can of spaghetti sauce (28oz)
               1 can of tomato paste (5 1/2 oz)
               1 can of water ( 5 1/2 oz)
               500g of cottage cheese
               2 eggs lightly beaten
               1/2 cup of Parmesan cheese
               1 bag of spinach
               1 package of grated Mozzarella cheese

               Instructions:
               Cook lasagna noodles as directed on package, drain and set aside.  Cook onions, garlic,
               meat together in a skillet.  Add the salt and pepper, spaghetti sauce, tomato paste and
               the water.  Mix and simmer for 20 minutes.

               Cheese Mix:
               Wash the spinach, take off the ends of the stems, drain and tear in small pieces (shred
               the leaves if you can).  Mix cottage cheese, eggs, parmesan cheese and the spinach
               together.  (The use of a blender comes in handy here but is not necessary.)

               The Layers:
               Spread a thin layer (1/3) of meat sauce in a dish (13"x9"x2").  Top it off with 1 layer of
               noodles (if noodles are stuck together, dip them in some water), followed by a layer of
               meat sauce, followed by another layer of noodles.  Spread the cheese sauce, followed
               by the final layer of noodles and the final layer of meat sauce.

               Sprinkle with grated cheese and cook in the oven at 350F, 40-45 minutes.  Let stand for
               10 minutes prior to serving.  Gives 6-8 servings.

               Vegetarian note:
               Replace ground meat with one smallish diced eggplant and saute with the onions and
               garlic as you would the meat
