Mint Vinaigrette

3 Tbsp             Cider vinegar
1 Tbsp             Honey
1 Tbsp             Dijon mustard
1/4 tsp             Each salt & pepper
1/4 cup            Vegetable oil
1 + Tbsp         Chopped fresh mint
Whisk together. Nice with mesclun mix or other spring greens.
