PARSNIP OVEN FRIES WITH DIPPING SAUCE
4 servings
1 lb. parsnips
2 Tbsp vegetable oil
1 tsp each cumin and coriander
1/4 tsp each salt & pepper
Peel parsnips and cut into 2 X 1/2 inch sticks. In a bowl toss together
parsnips, oil, cumin, coriander, salt & pepper.
Bake on greased baking sheet in a 425ºF oven, turning
occasionally, for 30 to 40 minutes until browned and tender.
Dipping sauce
1/2 cup yogurt
1/4 tsp curry paste
1 small green onion, minced
In a small bowl stir together yogurt, curry paste and green onions.
Serve dip with parsnip fries.
