PARSNIP FRITTERS (Serves 4)
A nice side dish or light snack

1 cup all purpose flour
2 tsp baking powder
1 tsp salt
1/2 tsp pepper
1 egg
2/3 cup milk
1 Tbsp melted butter
3-4 cooked parsnips, finely diced
Oil or clarified butter for frying

Mix together flour, baking powder, salt & pepper.
Beat the egg and mix the egg with the milk and melted butter.
Stir this mixture into the dry ingredients.
Stir in the cooked parsnips.
Divide the mixture into small balls or patties (makes about 16)
Fry in oil or clarified butter until browned.
