2 cups prepared peppers(about 6 red, 6 green, depending on size)
1 1/2 cups cider vinegar
7 cups sugar
2 pouches Certo
To prepare peppers:
Cut open peppers and discard seeds. Put through food chopper twice
using finest blade. Drain.
Measure 2 cups into a very large saucepan.
Add vinegar.
Add sugar. Mix well.
Place over high heat, bring to a full boil and boil very hard for one
minute, stirring constantly.
Remove from heat; at once stir in Certo.
Stir and skim foam with a metal spoon for 7 minutes to prevent floating
peppers.
Pour quickly into warm, sterilized jars filling up to 1/4 inch from
rim.
Seal while hot with sterilized 2-piece lids with new centres.
