PUMPKIN BREAD
makes 1 loaf
1 cup fresh
pumpkin puree or canned unsweetened pumpkin
1 cup sugar
1/2 cup canola oil
2 eggs
1 3/4 cups
unbleached all purpose flour
1 tsp. baking soda
1/2 tsp each of
cinnamon, cloves, nutmeg, salt
1/4 tsp baking
powder
1 cup pecans
Heat oven to
350ºF. Grease loaf pan (8X4 inch)
Beat together
pumpkin, sugar, oil and eggs in a large mixing bowl.
Sift dry
ingredients into the bowl and stirto combine. Add nuts. Pour into loaf
pan.
Bale for 1 hour or
until skewer inserted into centre comes out clean. Cool.
If frozen use
within 3 months.
