Pumpkin Butter
Great on toast, English muffins
1 tsp Lemon juice
1 tsp Lemon rind
1 lb Pumpkin, mashed
1/2 c Orange juice
3/4 c Brown sugar
1/8 tsp Ground ginger
1/8 tsp Ground cinnamon
1/8 tsp Ground cloves
1/4 tsp Salt
Bring all ingredients to a boil in a heavy pan. Reduce heat and simmer
over low heat for 30
minutes, being careful not to burn. Chill for 4 hours. Refrigerate
unused portion.
