RED ONION PIE
Serves 4
2 Tbsp. unsalted butter
4 or 5 red onions cut into ½ inch slices
4 cloves garlic, sliced
1 bay leaf
5 black peppercorns
2 or 3 whole cloves
1 sheet of frozen puff pastry, thawed
1 cup grated Gouda, Jarlsberg or Gruyère cheese
2 tsp fresh thyme
Heat butter in a large skillet, add onions, garlic, bay pepper and
cloves.
Over medium low heat and cook about 20 minutes until onions are soft
but not brown.
Add salt to taste.
Remove bay, pepper and cloves and discard.
Line a medium size oven proof pan with puff pastry, cover with onion
and top with
cheese and 1 tsp thyme.
Bake at 400ºF. On lowest rack of oven until golden brown about 15
min.
Just before serving sprinkle with remaining thyme.
