2 ¾ cups flour
1 ½ cups packed brown sugar
1 tsp. baking soda
1 tsp. salt
1 egg
1 cup buttermilk
½ cup cooking oil
1 tsp. vanilla
1 cup finely chopped rhubarb (if frozen, drain very well)
2 Tbsp. flour
Butter or margerine
Granulated sugar.
Grease and flour two average loaf pans.
In large mixing bowl stir flour, brown sugar, soda and salt.
In smaller mixing bowl combine egg, buttermilk, oil and vanilla.
Stir wet ingredients into dry ingredients. Mix well.
Toss rhubarb with 2 Tbsp of flour; fold into batter. Pour into pans.
Dot batter with 2-3 Tbsp. of butter and sprinkle with sugar. Bake
at 350ºF. for about 60
minutes or until toothpick inserted in centre comes out clean.
Cool in pans for 10 minutes before removing.
