RHUBARB RELISH
A truly memorable accompaniment to Fish Cakes, popular on the South Shore of Nova Scotia

2 Quarts     cut rhubarb
2 Quarts     onions, chopped
7 cups        white granulated sugar
3 cups        white vinegar
2 tsp.          salt
1 tsp.          pepper
2 tsp           ground cloves
2 tsp           cinnamon

Mix together in a large pot and cook until quite thick. Bottle in sterile jars with vacuum top lids as per maunfacturer's instructions.
