1 lb. cabbage, finely shredded
8 oz. onion, finely sliced
Pepper and 1 tsp salt
2/3 cup water
2 Tbsp butter
1 lb. mashed potato
1/4 lb Chedder Cheese, grated
1 Tbsp finely chopped fresh parsley
Butter a 1 quart overproof dish.
Set oven at 400°F.
Mix cabbage onion, salt and pepper together,
then place in dish. Pour over the water and dot with butter. Spoon the
mashed potato evenly over the cabbage and sprinkle with cheese.
Bake for 35-40 minutes until the cabbage
is tender and the top golden.
Sprinkle with chopped parsley.
Good with sausages or ham.
