Scalloped Tomatoes

2 cups or more of large cubes white day-old bread, or, baguette
1 onion, chopped
1/4 cup butter
5 large fresh tomatoes, diced (or 1-14 oz. can diced tomatoes)
1 Tbsp brown sugar
salt, to taste
pepper, to taste
1 pinch dried basil(optional)
 
1. Preheat oven to 350 degrees Fahrenheit.
2. Place cubed bread in a 9” X 13” greased pan.
3. Sauté the chopped onion in butter, and then pour over the cubed bread. Mix tomatoes, sugar, salt, pepper, and basil. Pour over bread and onion base.
4. Cover and bake for 30 to 40 minutes at 350 Fahrenheit. Great with meat loaf or sausages.
