WALDORF CAKE

In a bowl mix:
1 CUP WHITE SUGAR
2/3 CUP COOLING OIL
3 EGGS
2 CUPS COARSLEY GRATED CARROTS
1/2 CUP CHOPPED WALNUTS
1 CUP CURRANTS

Sift together
1 CUP FLOUR
1 TSP. SALT
1 TSP BAKING SODA
1 TSP BAKING POWDER
1 TSP CINNAMON

Fold into carrot mixture until  well blended.
Pour into 9 X 12" pan and bake  at 300ºF for 45 min to 1 hour until golden and firm.
Frost with cream cheese icing

CREAM CHEESE ICING
2 TBSP BUTTER
1 1/2 CUPS ICING SUGAR
1 TSP VANILLA
4 OZ PKG CREAM CHEESE
Mix with hand mixer until smooth
