BERRY GREEN SALAD(Serves 4)
4 cups young spinach leaves
4 cups torn romaine leaves or mixed salad greens
1 cup sliced  Nova Scotia strawberries raspberries, or blueberries
Vinegrette:
3 Tbsp cider vinegar
1 Tbsp honey
1 tsp Dijon mustard
1/4 tsp each salt & pepper
1/4 cup vegetable oil
1 Tbsp finely choped fresh mint (you can use 1 tsp. dried mint but it does not have the flavour)

In a large bowl whisk all vinegar, honey, mustard, salt & pepper together. Slowly whisk in oil in a fine stream. Add mint. Mix in salad greens. Divide into 4 individual salad bowls. Sprinkle with berries. Drizzle any vinegrette remaining in the bottom of the bowl over berries.
