To prepare fruit:
Prepare
2 cups sliced cantaloupe.
Add
Few grains salt
Sugar to taste
Pinch of nutmeg
1 egg or 1 Tbsp. quick tapioca or 1 Tbsp flour
Spread in a buttered baking dish and dot with butter
To prepare batter:
Sift together in large bowl
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp salt
1/2 cup sugar
In separate bowl mix
1 egg, well beaten
1/2 cup milk
1/2 cup melted butter
1 tsp vanilla
Stir liquid mixture gently into the flour mixture
Pour batter over prepared fruit. Bake at 425°F.for 30 minutes. Serve warm or cold with whipped cream or ice cream.
