CRAN-CARROT CAKE
Makes one 9"x9" cake

1½ cup/375ml all purpose flour
1 tsp/5ml  baking powder
1 tsp/5ml  baking soda
½ tsp/2 ml  salt
½ tsp/2 ml  nutmeg
½ tsp/2ml  cinnamon
1 cup/250ml  grated Nova Scotia carrot
½ cup/125ml  whole cranberry sauce
1 cup/250 ml  sugar
2/3 cup/165ml  oil
2   eggs
½ cup/125ml  sifted icing sugar
1 Tbsp/15 ml  light cream

Combine flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add carrots, cranberry sauce, sugar, oil and eggs; beat until well blended. Pour into greased 9"x9"x2" pan. Bake at 350ºF(170ºC) for 40 to 45 minutes. When cool, combine icing sugar and cream and drizzle over the cake.
