Nova Sotia sweet corn is available from July until well into September. It is acknowledged that corn is at its most savoury fresh from the field, boiled or barbequed, eaten from the cob. However, if you have purchased a couple of ears too many, or just want a change, try the following:
Sauteed Corn
Start with fresh corn - remove husks
and silk. Cut the kernels off the cob, trying not to break them. Melt butter
in a skillet, add the kernels and simmer gently for 4 minutes - stirring
constantly. Season to taste.
Variations:
Just before the corn is finished, add
1/2 cup of heavy cream and heat through (with apologies to the dieters)
or
Add diced green or red peppers and tomatoes
or
Chop up onions, sauté first - then
add the corn! Yum
