1 lb. Webster Farms dried beans
2 tsp. dried mustard
1/3-tsp. pepper
1/2 cup brown sugar
1/6 lb. salt pork or bacon
2/3 cup molasses
1 tsp. vinegar
1 tsp. salt
1 medium onion
Soak beans overnight in plenty of water
to cover OR place beans in large pot with cup
of water, boil 5 minutes covered, remove
from heat and let stand 1 hr. Drain, discard
water and rinse.
Place beans in large pot with 6 cups of
water. After boiling 5 minutes, simmer until
beans are tender, approximately 1/2 hour.
A sure test is to remove a bean from pot,
blow on it and if skindiscards, they are
ready. Beans simmered too long will become
mushy, simmered not long enough will remain
hard. Drain, rinse and place in slow
cooker.
Combine ingredients, except onion, with
one cup warm water, stir well. Pour over
beans, stirring gently, add enough water
to cover, add quartered onion to top. Cook on
high for 4-5 hours covered. These may
also be done in the oven, covered at 300
F/150C for 4-6 hours. Add water during
cooking if necessary. Avoid excessive stirring.
Makes approximately 6 cups.
